5 (6 inch) Tortillas
1 cup chopped, cooked ham
1 cup shredded cheese of your choice
8 eggs, beaten
1/2 cup cream-style corn
1 tsp. Big Dave's Chili Powder
1/2 cup chopped green or red pepper
2 Tbs. finely chopped fresh cilantro or parsley
Spray 9 inch pie plate with non-stick spray.
Place 4 tortillas in pie plate, overlapping and extending 1/2 inch beyond rim. Place remaining tortilla in center.
Layer with ham and cheese.
Combine eggs, corn, and Big Dave's Chili Powder and slowly pour over ham and cheese.
Sprinkle with peppers and bake at 350 degrees F (180 C) for 25 to 30 minutes, or until center is set.
Sprinkle with cilantro and let stand for 5 to 10 minutes before serving.
Serve with sliced avocado and cherry tomatoes.
