1 1/2 cups Bandana Bandito Hot Salsa de Chili Verde
3 thick flour tortillas, cut into small pieces
1/2 cup chopped ham (don’t chop too small)
1 cup grated cheese
1 small zucchini, diced
5 large eggs, beaten
Salt and pepper to taste
Prepare a small baking pan with non-stick spray.
Line bottom of pan with cut up tortilla pieces.
Layer ham, cheese and zucchini.
Beat eggs well and add Bandana Bandito Hot Salsa de Chili Verde.
Pour over ingredients in pan.
Top with cheese and let stand in refrigerator overnight.
Bake at 375 degrees F for 45 mins or until top is browned and puffy.
Serve with tomato and avocado slices, plus refried beans or Spanish rice.
